For dinner this week, I wanted something that I could warm-up in the oven, and was vegetarian. The sweet potato burrito has no meat, plenty of vegetables and only take ten minutes to reheat. Plus, these burritos are cheap and easy to make.
Last week, I saw this recipe, and wanted to try it. I did change somethings about the recipe, such as cutting out the rice because I did not want that many carbs, and mashing the sweet potatoes with the salsa to make a spread. Overall, the recipe was pretty easy to follow, and the burritos are very filling.
