Due to the fourth of July holiday, and lack of sleep, I got behind on my meal prep for the week. Usually, I prep a weeks worth of meals for my boyfriend and I every Sunday afternoon. It's a long process but totally worth it. I don't know how much money we've saved since I began meal prepping, but I feel like it's a good bit.This week, I made the effort to change up my meals while still staying healthy, and within the budget. I resorted to one of my favorite premade granola'sBear Naked Honey Almond granola. I discovered it when I returned from Costa Rica. Weird, right? Well, when I returned to the U.S I wanted to lose weight, because I had gained a few pounds while abroad. I hadn't made granola in five months and I did not have time to make it. This granola is pretty high in protein and low in sugar. A plus for someone like me.
A few months after I returned, I began to cook consistently. I tried new recipes and wanted to find healthier alternatives to my favorite recipes. I found these Dang Toasted Coconut chips, which are great in granola, or if you want something that's sweet, and won't break your diet. These have become my favorite little treat.
As I mentioned before, I had very little time to cook this week. I needed to make foods that were easy to put together before and after work. I decided to grill tofu, bake pesto chicken and wash/cut romaine lettuce. All of these ingredients can be used in sandwiches, or used in salads.
For breakfast this week I returned to an old favorite of mine, Lean Way cereal with almond milk, black berries. and a nice cup of warm tea. Lean Way is high in fiber and contains sixteen grams of protein per cup. I love adding some sort of tart berry to offset some of the sweetness. The chai green tea is a new find, mainly because it was on sale and I love Stash tea. Having Stash products reminds me of going on dates to Amelie's French Bakery with my boyfriend. Good times.
